No other dish in Malaysia is as famous as the Nasi Lemak. Nasi lemak is a Malay fragrant rice dish cooked in coconut milk and pandan leaf. It is commonly found in Malaysia, where it is considered the national dish; it is also the native dish in neighbouring areas with significant Malay populations such as Singapore; Brunei, and Southern Thailand. They usually eat Nasi Lemak for breakfast. Here is my traditional recipe using low fat coconut cream liquid with a healthy twist to keep you going strong during this MCO.
'Healthy' Rice:
2 cups Basmati Rice
65ml Coconut cream milk
3 1/2 cups Water
1 1/12 inch Ginger (sliced)
2 tbsp Virgin Coconut Oil
Pinch of salt
'Healthy' Ikan Bilis:
Dry cook the ikan bilis in the microwave to get a crispy texture without the oil. To achieve this, place it on a plate, on top of a paper towel and pop it into the microwave for 4 mins.
'Healthy' Chicken:
Marinate the chicken with low fat yogurt, curry powder and a bunch of spices and then bake in the oven for 40 mins about 180 Celcius.
'Healthy' Sambal Ikan Bilis:
Use raw organic brown sugar which is the healthier option. Alternatively, you can use gula Melaka too. Remember to use less oil and less sugar.
10 Shallots
15 Dried chillies
5 Garlic cloves
1 inch Tamarind with 1 cup hot water
5 tsp raw organic brown sugar
2 tbsp Olive Oil
Water
Cooked ikan bilis
*tbsp= table spoon
*tsp= tea spoon
